That's correct. If you don't reset your quit date your stats will be slightly off, it's up to you to determine what you'd find more effective.

The diary entries and cravings won't be erased if you reset your quit date.

Last question - does the health data adjust according to any smoking recorded/ cigaretttes smoked? e.g. energy levels/ circulation etc ? or is it all based on the quit date entered?

The health data adjusts a little, but only the first few bars as the rest take weeks or longer to return to normal and the impact of one cigarette on them is hard to detect.
